Massaged Kale Salad

I promise you you will like this salad, even if you 1) do not like kale typically or 2) do not usually like salad. I had a guy tell me "I would never have known this was kale if you hadn't told me", and I have Connor repeatedly asking to have this salad. I think it's a winner.

Massaged Kale Salad

Servings: 4-5 servings


  • 1 large bag of chopped kale (~6 cups raw)
  • 1/4 cup sliced almonds (you can buy them pre-sliced in the baking aisle)
  • 2 Tbsp olive oil
  • 1 Tbsp vinegar
  • 1 Tbsp lime juice
  • 1/4 tsp garlic powder


  1. Rinse the kale and place it in a large bowl
  2. Pour the olive oil, vinegar, lime juice, and garlic powder over the kale
  3. Using your hands, mix and massage the kale until the leaves are visibly darker and softer
  4. Pour the sliced almonds over the kale mixture and toss lightly
  5. Serve and enjoy; this will stay fresh in the fridge for ~4 days and is perfect to meal prep
