Blueberry Granola

I found this amazing grass-fed, full fat yogurt at TJ (Trader Joe's, aka my favorite place on earth). I prefer full fat dairy (for those without heart or lipid issues) because it's 1) creamy & delicious and 2) keeps you fuller way longer than 0% fat products. And naturally, I wanted to enjoy some low sugar granola with this newly discovered product bc #celebrating my birthday today (23, my "Jordan year"). I also heard rumor that TJ also sells freeze dried fruit, so I thought I would try them in this recipe! 

The granola tastes amazing! It's not clumpy, like some granolas. But it has a good flavor with the blueberries. The freeze dried blueberries also swell back up when left to sit in yogurt for a few minutes. + flax seeds for healthy BMs (yay digestion!) 



1 cup of old fashioned oats

1/4 cup coconut oil

1 tbsp honey (optional)

1/4 cup flax seeds

2 tbsp hemp seeds

1/4 cup chopped cashews (or other nuts)

1/2 cup freeze dried blueberries



1. Melt coconut oil and pour over oats.

2. Mix together oats, coconut oil, and honey. Mix until fully coated.

3. Stir in the rest of the ingredients, mixing well.

4. Bake for 30 minutes at 300 degrees, stirring every 10 minutes.
