Breakfast Stuffed Sweet Potato

Really really good, really really easy & delicious. This breakfast also keeps me full so much longer than other breakfasts I have been trying. I think I'm going to be repeating this breakfast for a few weeks now! I use a nifty potato bag that cooks the sweet potatoes in the microwave so fast. Half the battle with potatoes is the long cooking time...the magical potato bag eliminates that. Link to buy your own potato bag found here

 

Ingredients:

1 sweet potato

2 Tbsp peanut butter

Handful of blueberries

Cinnamon

a few walnuts (optional)

 

HOW TO COOK:

Option 1: Wash your sweet potato and leave it wet. Place wet sweet potato in a potato bag (found here) and cook in the microwave for 6-7 minutes, depending on the size of the potato

Options 2: Wash your sweet potato, puncture it with a fork about 4-5 times, wrap in damp paper towel and microwave for 5-6 minutes depending on size

Option 3: Wash 3-4 sweet potatoes and poke 3-4 holes in each with a fork. Place them in your Instant Pot with 1 cup of water. Cook on high pressure for 15-20 minutes, depending on size. Medium potatoes should cook for about 18 minutes.
