Chia Seed Pudding Oats

Kickin' these oats up a notch with a layer of chia seed pudding on the bottom! Ya know, it just felt right.

Chia Seed Pudding Oats

  • Total time: 20-30 minutes

Servings: 1 serving

Ingredients:

  • 1/2 cup old fashioned oats
  • 1 cup water
  • 2 Tbsp chia seeds
  • 1/4 cup milk of choice
  • 1 Tbsp almond butter
  • 1 tsp 100% maple syrup or honey
  • Coconut flakes and walnuts to top

Instructions:

  1. Place the coconut milk and chia seeds in a bowl or cup and mix. Let stand for 10 minutes or until thickened
  2. Make the oats according to the directions
  3. Once oats are cooked, mix in almond butter and maple syrup/honey
  4. Place the oats on top of the chia seed pudding and top with coconut flakes and nuts
