Kale Greek Salad with Rosemary Dressing
Combining a few of my favorite things here: black olive, rosemary, and feta cheese! Inspired by the amount of leftover kale I had from last week. Maybe over buying produce pays off after all?
Ingredients for salad:
2 cups chopped kale
1/4 cup bell pepper, chopped
1/4 cup diced red onion
1/4 cup tomatoes, diced
6-8 black olives
2 tbsp feta cheese
Ingredients for dressing: (Makes about 4-5 servings of dressing)
1/4 cup vinegar
1 Tbsp olive oil
1 spring of rosemary, chopped (~ 1 Tbsp)
salt + pepper
1. Combine all dressing ingredients in a small bowl and whisk together well
2. Pour 1 Tbsp over the salad ingredients and enjoy!
