Leftover Banana Chocolate Chip Muffins

Don't you always feel bad for having that one (or two) left over bananas that you let turn brown? Don't be sorry anymore, because this is the perfect solution! You can double and triple this recipe as needed per leftover banana - just keep it to one egg even if you multiply the recipe!

Leftover Banana Chocolate Chip Muffins

  • Prep time: 10 minutes
  • Cook time: 18-20 minutes
  • Total time: 28-30 minutes

Servings: 4 muffins (or multiply by number of bananas)


  • 1 overripe banana
  • 2 Tbsp melted butter
  • 1 egg (don't multiply this ingredient...keep it to one egg unless you add more than 4 bananas!)
  • 2 Tbsp sugar
  • 1/4 tsp vanilla
  • 1/4 tsp baking powder
  • 1/2 cup flour (regular or whole wheat)
  • 1/4 cup chocolate chips


  1. Preheat oven to 350 degrees
  2. Melt butter in the microwave
  3. Mix butter and peeled overripe banana together and mash/mix until smooth
  4. Stir in sugar, baking soda, egg, and vanilla and mix until smooth
  5. Mix flour until combined, but do not over mix!
  6. Fold in chocolate chips
  7. Place batter in muffin tins and bake for 18-20 minutes. (This recipe should make ~4 muffins)
