Red Quinoa and Chia Seed Pudding

Normally I am not a huge fan of savory quinoa, but SWEET quinoa...I can definitely get on board with that. And lately it's a great way to get in some extra protein at breakfast! I think it may even rival my love for steel cut oats!

Red Quinoa and Chia Seed Pudding

  • Cook time: 15-20 minutes
  • Total time: 30-35 minutes

Servings: 2 servings

Ingredients:

  • 1/2 cup quinoa, raw
  • 1 cup of water
  • 4 tbsp chia seeds
  • 2 cup milk of choice
  • 1/2 cup walnuts
  • 1/4 cup blueberries

Instructions:

  1. Bring 1 cup of water to a boil, place 1/2 cup raw quinoa into boiling water and simmer on low heat with a lid on the pot for 15-20 minutes until water is fully absorbed
  2. Place 1/2 cup of cooked quinoa into a bowl with 1 cup of milk and 2 Tbsp chia seeds, repeat for second bowl. Mix thoroughly.
  3. Place in fridge overnight or for about 30 minutes-1 hour in order to activate chia seeds.
  4. Before eating, top with blueberries and walnuts
