This was a lunch for my that I took during the work week and it was SO easy. The only thing that requires cooking is the chicken, and you just throw that in the oven!! I threw all of this in a tubberware and off I was to work. And get this - I ACTUALLY looked forward to having this every day!

Refried Black Bean Bowl

  • Cook time: 25-30 minutes
  • Total time: 35-40 minutes

Servings: 4-5 servings

Ingredients:

  • 2 cans of refried black beans (be careful here! I got mine from Trader Joe's and the ingredients are SIMPLE. Try to find one without added fat or lard!)
  • 3 Chicken Breast
  • General Wellness' Jalapeno Cream Sauce
  • Sour Cream
  • Blue Agave Sriracha Yellowbird sauce
  • 1/4 cup Chopped Cilantro
  • 1-2 avocados
  • Corn tortilla chips

Instructions:

  1. Preheat oven to 400 degrees
  2. Sprinkle salt + pepper on the 2 chicken breast and bake for 25-30 minutes.
  3. Once chicken is cooked all of the way through, dice chicken breast and coat with cilantro dressing mix.
  4. Mix ingredients together and ENJOY!
