Spinach and Tuna Greek Salad

Servings: 1 salad
DRESSING (makes about 4-5 servings) -
- 1/4 cup vinegar
- 2-3 Tbsp olive oil
- Salt + pepper
- 1.5 cup spinach leaves
- 1/4 cup chopped cucumber
- ~8 black olives
- 1/8 cup chopped tomatoes
- 1/4 of an avocado
- 1/2 of a small can of white albacore tuna
- 2 Tbsp feta cheese
- 1-2 Tbsp dressing
- Combine all dressing ingredients and whisk until smooth.
- Place spinach in a large bowl and toss with dressing
- Add remaining salad ingredients and enjoy
