Summer Cucumber Salad

This week I am craving vegetables in excess. Probably because I had to eat on the road a few times last week and it just wasn't satisfying. And since summer is just around the corner, I decided to incorporate some seasonal vegetables into my lunches this week! This salad is crisp, refreshing, and tangy in just the right amount. I also am going to eat mine with a can of tuna to keep me fuller longer. It's also better the longer it sits and marinades!

Servings: 5-6 servings


  • 1 large cucumber
  • 2 tomatoes
  • 2 bell peppers
  • 1/4 cup vinegar (I used regular, you could also do red wine vinegar)
  • 2 Tbsp lemon juice
  • 2 Tbsp olive oil
  • Salt + pepper


  1. Chop all vegetables into bite sized pieces
  2. Place all chopped veggies into a large bowl
  3. In a separate, smaller bowl combine the remaining ingredients for the dressing
  4. Whisk dressing ingredients together well and pour over the vegetables
