Vegetable Stir Fry

Servings: 4-5 servings

Ingredients:

Sauce Ingredients:

  • 1/4 cup liquid aminos or soy sauce
  • 1/2 tsp red pepper flakes
  • 1/2 tsp dry mustard
  • 1 Tbsp honey
  • Salt + pepper

Stir Fry Ingredients:

  • 1 package of frozen shelled edamame
  • 3 large carrots, diced
  • 1 small yellow onion (~1/2 cup chopped)
  • 2 large (or 3 small) zucchinis, noodle'd
  • 2 tsp olive oil
  • 2-3 cups of brown rice, cooked

Instructions:

  1. Chop all vegetables and place carrots and onion in a large skillet with 1-2 tsp olive oil and sauté until soft
  2. Add edamame into the skillet and pour sauce over vegetables and toss together over heat
  3. Place zucchini noodles in skillet and toss together and cook for another 2-3 minutes
  4. Place vegetables over brown rice and enjoy
