Walnut Oatmeal Pancakes

OH my goodness  these pancakes were amazing...Happy 4th of July to me, am I right???

I went to Whole Foods last night right before they closed in need of some rolled oats and strawberries to make these complete. Highly highly suggest topping with strawberries and blackberries. They make them taste much sweeter so you won't need as much syrup! I think these may be my new favorite pancake recipe!

Walnut Oatmeal Pancakes

  • Total time: 20 minutes

Servings: 6 medium sized pancakes

Ingredients:

  • 3/4 cup old fashioned oats
  • 1/2 cup chopped walnuts
  • 2 Tbsp ground flax seed
  • 3 dates, pitted and halved
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup water
  • Dash of cinnamon

Instructions:

  1. Place the old fashioned oats and walnuts into a food processor and blend until flour-like texture
  2. All the dates and eggs and blend until dates have been broken up into very small pieces
  3. Combine remaining ingredients and mix well
  4. Cook over medium heat
  5. Top with fruit and syrup
