Sweet Potato Sausage Hash


Inspired by my roommate and her sweet potato-loving self. 



1/2 lb breakfast sausage

2 large sweet potatoes

2 red bell peppers

2 Tbsp avocado or olive oil

1 red onion

Cheddar cheese for topping

Salt + pepper



1. Wash and dice sweet potatoes into 1/2 inch cubes (I leave the skin on)

2. Heat oil in a large skillet over medium-high heat

3. Add diced sweet potatoes and cook until soft, stirring and tossing occasionally (~15 minutes)

4. Dice bell pepper and onion and add to sweet potatoes about half way through cooking

5. In a separate skillet, brown the sausage thurothoroughlyughly

6. Combine all after cooking and toss together

7. Top with cheddar cheese and enjoy
