Instant Pot Beef Stew

2 lb beef, cubed (I bought already cued “stew beef”)

2 Tbsp avocado oil

1/2 cup flour

1 1/2 tsp salt

1/2 tsp pepper

64 ounces of beef stock (2 regular sized cartons)

1/2 tsp garlic

1 1/2 cup carrots, chopped

1/2 cup green onions, chopped

1/2 lb of butter potatoes, cubed

1/2 cup mushrooms, chopped


1) Place the oil in the Instant Pot on “Saute” mode and heat the oil

2) Place the beef cubes in a bowl and toss with the flour, salt, and pepper

3) Sear the beef on all sides, best to do this in batches

4) Return beef to instant pot and add the remaining ingredients

5) Place on “Pressure Cook” for 20 minutes

6) Naturally release the steam and serve
