Pumpkin Scone with Cinnamon Frosting

Scones are one of those things for me that makes a morning SO COZY. And Pumpkin Scones have got to be the best of all my fall morning dream worlds together in one. Whenever I’m at a bakery, for some reason my little heart just gravitates towards scones of any kind. Blueberry scones, cinnamon scone, ANY scones. And now that it’s fall, I’m of course on the pumpkin kick (aren’t we all?).

These Pumpkin Scones have an amazing Cinnamon frosting as well to give them a little sweetness because scones themselves aren’t typically too sweet on their own. Frosting is a great way to add some sweetness if you desire, but it’s also easy to leave off for a lower sugar treat !

When you’re creating the dough for these scones, the dough should become moist, but now wet when kneaded. You will then create the rectangle shape and cut the scones according to the directions and images above so that they are the classic scone shape!

Pumpkin Scones with Cinnamon Frosting

Servings: 8 large scones

Ingredients:

Scone Ingredients:

  • 1/2 cup butter, grated
  • 1/4 cup milk
  • 1 egg
  • 1/2 cup pumpkin purée
  • 2 cups of flour
  • 1/3 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 2 tsp baking powder

Frosting Ingredients:

  • 3/4 cup powdered sugar
  • 1 Tbsp butter, melted
  • 1/2 tsp cinnamon
  • 1 1/2 tsp milk

Instructions:

  1. Preheat oven to 400 degrees
  2. Using a cheese grater, grate the butter and set aside
  3. Combine the wet ingredients (milk, egg, pumpkin puree) in a small bowl and mix well
  4. Mix all remaining dry ingredients in a separate large mixing bowl
  5. Add grated butter into the dry ingredients and incorporate the butter into the dry ingredients
  6. Stir in the wet ingredients and knead with your hands until well combine
  7. Form the dough into a ball
  8. Using a rolling pin, form dough into a large rectangle (about 12 inches by 8 incheas in size)
  9. Cut the dough into 8 triangles by cutting first into 4 quadrants, then diagonally cut each quadrant into two pieces
  10. Place scones on a greased baking sheet and cook for 18-20 minutes
  11. While scones are baking, mix all frosting ingredients together and set aside
  12. Once baked, remove scones from the oven. Let them cool for ~10 minutes before frosting them
