Homemade Yellow Cake Cupcakes



CAKE (Makes 12-14 cupcakes) -

3/4 cup all purpose flour

3/4 cup self rising flour

1 tsp baking powder

1/2 tsp salt

3/4 cup white sugar

1/3 cup butter, softened

2 Tbsp vegetable oil

2 tsp vanilla extract

1 whole egg

1 additional egg yolk

3/4 cup milk


DAD’S FAMOUS CHOCOLATE FROSTING (Makes 2 cups of frosting) -

1/2 cup butter, melted

3 cups powdered sugar

3/4 cup cocoa powder

2 tsp vanilla extract

1/3 cup milk (or half and half for creamier icing)


1) Preheat the oven to 325 degrees

2) Mixix together both of the flours, baking powder, and salt and stir well. Set aside

3) Using a handheld of standing mixer, cream the sugar, butter, oil, and vanilla together

4) Add in the egg and egg yolk

5) Add the dry mixture and the mil, alternating as you mix

6) Place 1/4 cup of batter into a lined cupcake tin

7) Bake for 24-26 minutes

8) While baking, stir together all of the frosting ingredients and mix until smooth

9) Once the cupcakes are finished baking (tooth pick comes out clean), let them stand for at least 10 minutes before icing
