Blueberry Scones

Sometime Is throw things together with what I have and let’s be honest, it goes terribly wrong. But this time I hit the jackpot - Connor was obsessed and I had myself wishing I doubled the batch.

Ingredients: (Makes 4 scones)

1 cup self rising flour (if using regular all purpose flour, just add additional 1 1/2 tsp baking powder and a dash of salt)

1/4 cup white sugar

1/2 tsp baking powder

1/4 tsp vanilla

1/4 cup coconut oil 

1/2 cup blueberries

Instructions:

1) Preheat the oven to 400 degrees.

2) Combine self-rising flour, baking powder, and white sugar into a bowl and toss together well

3) Place the coconut oil and vanilla in the bowl and use a fork to mash the coconut oil into small pieces and toss together with remaining ingredients. You want to incorporate the coconut oil throughout the dough without overtaxing. It’s the layers of coconut oil that will create a flaky crumb

4) Toss in the blueberries and divide dough into 4 small balls. Place the dough on a baking sheet

5) Bake for 16-18 minutes
