Macadamia Nut Crusted Salmon

THIS was delicious and FULL of healthy fat - what a combo!

Ingredients: (Makes 4 servings)

4 salmon fillets

1 cup macadamia nuts

1/2 tsp garlic powder

Salt & pepper

Juice of 1 lemon

Instructions:

1) Preheat oven to 400 degrees

2) To crush macadamia nuts: Either place macadamia nuts in between two paper towels, in a ziplock, or a bag and use a meat hammer to smash them OR use a food processor or small blender to pulse them to small pieces

3) Add lemon juice, salt, pepper, and garlic powder into the macadamia nut mixture and mix together well

4) Place salmon skin side down only a baking sheet or in a glass dish

5) Top the salmon with the macadamia nut mixture

6) Bake for ~12-15 minutes, or until the fish reaches internal temperature of 145 degrees
