Strawberry Almond Butter Oatmeal Cups

Strawberry Almond Butter Oatmeal Cups

  • Total time: 27-30 minutes

Servings: 18 oatmeal cups

Ingredients:

  • 3 cups old fashioned oats
  • 1 cup almond butter
  • 1/4 cup ground flax seed
  • 1 cup chopped strawberries
  • 3 eggs
  • 3 Tbsp maple syrup
  • 2 cups almond milk

Instructions:

  1. Preheat oven to 350 degrees
  2. Combine all ingredients into a large bowl and mix well
  3. Scoop ~1/4 cup of batter into muffin tins (Should make about 18 oatmeal cups)
  4. Bake for 17-20 minutes, until a toothpick comes out clean in the center
  5. Store in the fridge to last longer (about a week)
