Breakfast Sweet Potato Bowl

Servings: 6-8 servings


  • 4 medium sweet potatoes
  • 1 cup of milk of choice (I used almond milk)
  • 1 Tbsp cinnamon
  • 1/2 cup ground flax seed


  1. Wash the sweet potatoes and poke 2-3 holes in each with a fork
  2. Place sweet potatoes in an instant pot and cook on HIGH pressure cook for 15 minutes, let steam naturally release for 10 minutes -- NO INSTANT POT? no problem - dice sweet potatoes into large cubes and boil until soft (some nutrients do leach this way, so instant pot is preferred method)
  3. Peel skin off sweet potatoes after cooked and place in a large bowl for mashing OR in a standing mixer bowl for easy mixing
  4. Add remaining ingredients and mix/mash together until a smooth consistency
  5. Add sweet potato mash to a bowl of yogurt and enjoy!
