Everyone loves a good breakfast sandwich! And these egg cups can be made ahead for a very quick healthy breakfast option on the go!

Healthy Egg McMuffin

Servings: 6 servings


  • 6 eggs
  • 6 English Muffins
  • 6 cheese slices
  • 1/4 cup bell pepper, chopped
  • 1/4 cup red onion or shallots, chopped
  • 1/2 cup spinach, chopped


  1. Preheat oven to 350 degrees
  2. Crack eggs into a large bowl and beat together
  3. Add in all chopped vegetables and mix together well
  4. Grease a muffin tin and pour 1/4 cup of the mixture into each muffin tin
  5. Bake for 25 minutes
  6. Once baked, place an egg cup inside an English Muffin and place a slice of cheese on top and can also keep the egg cups in the fridge and assemble each morning - microwave for 30 seconds and enjoy
