Instant Pot Tex Mex Shredded Chicken


Have a habit of making BORING chicken..? I DID TOO. On a mission to finally make chicken I love and want more of and I think I finally did it.

This saucy and spicy chicken is the perfect addition to a tex mex meal, tacos, or taco bowl. Eat up!

Instant Pot Tex Mex Shredded Chicken

  • 4 pieces of chicken (~1.25-1.5 pounds)
  • 1 can fire roasted tomatoes
  • 1 small can (7.5 ounces) chipotle peppers in adobo sauce
  • 2 slices of red onion, rings separated
  • Juice of 1 like (~2 Tbsp)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 cup water (for 6 quart Instant Pot...add 1 cup of water if Instant Pot is larger)


  1. Place all ingredients in the instant pot and mix well
  2. Pressure cook on the normal setting for 9 minutes
  3. When time is up, quick release the pressure
  4. Take the chicken out of the Instant Pot and place in a large bowl, but leave the sauce in the Instant Pot
  5. Shred the chicken with two forks
  6. Remove the remaining sauce in the Instant Pot and place in a blender and blend until smooth (if using a fully sealed blender like a Nutribullet, release heat/pressure in between blending so it doesn't pressurize with the heat!)
  7. Stir the blended sauce into the shredded chicken and serve!
