Kale Superfood Salad with Homemade Vinaigrette

Superfoods are a classification give to foods that are PACKED with vitamins, minerals, and antioxidants and provide loads of benefits to the body. This recipe contains several superfoods including walnuts, kale, tofu, avocado, and pomegranate seeds! Not a boring salad by any means, trust me.

Kale Superfood Salad with Homemade Vinaigrette

Servings: 4-5 salads

Ingredients:

  • 10-12 cups of chopped kale (you can buy pre-chopped kale in bags in the produce section...I bought 2 large bags)
  • 1 head of cauliflower
  • 2 avocados, chopped
  • 1/2 cup pomegranate seeds
  • 1 cup walnuts
  • 1 package of tofu, extra firm
  • 2 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 1/4 tsp garlic powder
  • Salt + pepper
  • 1/2 cup Easy Homemade Vinaigrette or other dressing of choice

Homemade Vinaigrette Dressing:

  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 Tbsp lemon juice
  • 1/4 tsp garlic powder
  • 1/4 tsp ground pepper
  • 1/4 tsp salt

Instructions:

  1. Preheat oven to 400 degrees
  2. Chop cauliflower head into small florets and place on a baking sheet
  3. Place olive oil, salt, and pepper ove cauliflower florets and toss until coated. Set pan aside
  4. Take the tofu out of the package and dry with a paper towel. Lightly press to remove excess water
  5. Chop tofu into cubes and place in a bowl
  6. Add 2 Tbsp lemon juice, garlic powder, salt, and pepper to the tofu bowl and toss until well combine. Let marinate in the bowl for 10 minutes
  7. After tofu has marinated, place on a baking sheet
  8. Put both baking sheets into the oven once preheated and cook for 30 minutes, stirring half way through
  9. While cauliflower and tofu are in the oven, prepare the salad dressing and set aside
  10. Remove cauliflower and tofu from the oven once fully cooked and crispy
  11. Place kale in a large bowl and pour salad dressing over the kale. Massage dressing into the kale leaves. You will notice that they turn dark green, soften, and shrink down - this is when you can stop massaging the kale (massaging makes it easier to digest and more tasty)
  12. Top with remaining ingredients, tofu, and cauliflower and enjoy!
