Honey Chicken Salad

Servings: 4 servings

Ingredients:

  • 2 chicken breast, shredded (~6 ounces)
  • ¼ cup grapes
  • ¼ cup walnuts
  • 3 Tbsp honey
  • 2 Tbsp green onions (optional)

Instructions:

  1. Boil chicken for 8-12 minutes for about 2 chicken breast. Check temperature with thermometer (should reach 165 degrees) or cut open to see if they are done cooking
  2. Cut grapes in half and set aside. Dice green onions and set aside as well
  3. Shred chicken with two forks and place in a large bowl
  4. Add remaining ingredients and mix well
  5. ALTERNATIVELY: cook chicken in crock pot (low for 5-6 hours or high for 3-4 hours), instant pot (10-15 minutes), or the oven (400 degrees for about 20-25 minutes) and shred with two forks
