Apple Harvest Sweet Potato Bowl

Servings: 4-5 bowls


  • ~3 medium sweet potatoes (4 small sweet potatoes or 2 large will also work)
  • 1 head of broccoli
  • 1 red onion
  • 2 cans of kidney beans
  • 2 red apples
  • 1/2 - 1 cup of crumbled goat cheese
  • 1/4 tsp garlic powder
  • 3 Tbsp of olive or avocado oil
  • Salt + pepper


  1. Preheat the oven to 400 degrees
  2. Wash and dice the sweet potatoes into 1" cubes (peeling potatoes is optional)
  3. Place sweet potato cubes on a large baking sheet and drizzle salt, pepper, and 1 Tbsp oil over them and toss well
  4. Wash and cut the broccoli head into florets and place on the same baking sheet with the sweet potatoes if there is room
  5. Sprinkle garlic powder, salt, pepper, and 1 Tbsp oil over the broccoli and toss well
  6. Cut the apples into wedges and place on a separate baking sheet
  7. Place the baking sheet with the broccoli and sweet potatoes in the oven with the apple baking sheet. Bake for 15-20 minutes
  8. After 15-20 minutes, remove the apples from the oven and set aside. Remove the broccoli and sweet potatoes from the oven, stir, and return to the oven to bake for an additional 20-25 minutes or until sweet potatoes are soft and broccoli is beginning to crisp
  9. While that is baking, cut the red onion into strips and sautee in 1 Tbsp of oil until they begin to carmelize, then remove from heat and set aside
  10. Drain and rinse the kidney beans in a collander and set aside
  11. Once all ingredients are cooked, combine into a bowl and top with 2-3 Tbsp goat cheese and enjoy!
