Sundried Tomato and Spinach Stuffed Chicken

  • 2 chicken breast (~1 pounds of chicken)
  • 1/2 cup spinach
  • 1/2 cup shaved Parmesan cheese (only about 1/3 cup if using grated Parmesan cheese)
  • 1/2 cup sun dried tomatoes
  • 1 Tbsp olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp salt


  1. Preheat the oven to 400 degrees
  2. Add spinach, Parmesan cheese, sun dried tomatoes, olive oil, garlic powder, and salt into a blender or food processor and blend until combined
  3. Place the chicken on a cutting board and using a knive parallel to the cutting board, slice the chicken (without cutting all the way through) to where the chicken can be folded open and stuffing placed inside
  4. Place half of the stuffing inside each chicken breast and fold the chicken back over to close the stuffing inside
  5. Place the chicken breast on a baking sheet and sprinkle the tops with salt and pepper
  6. Bake for 30-35 minutes or until the chicken reaches internal temperature of 165 degrees
