Red Quinoa and Chia Seed Pudding

Normally I am not a huge fan of savory quinoa, but SWEET quinoa...I can definitely get on board with that. And lately it's a great way to get in some extra protein at breakfast! I think it may even rival my love for steel cut oats!

 

Ingredients:

1/2 cup cooked quinoa

4 tbsp chia seeds

1 cup milk of choice (I use coconut milk)

3 tbsp walnuts

1/4 cup blueberries

 

Instructions:

1. Cook quinoa per package.

2. Place 1/2 cup of cooked quinoa into a bowl with coconut milk and chia seeds. Mix thoroughly.

3. Place in fridge overnight or for about 30 minutes-1 hour in order to activate chia seeds.

4. Before eating, top with blueberries and walnuts
