Turmeric Scramble Breakfast Tacos

A healthy twist on the (much loved) breakfast taco ~

 

Ingredients: 

2 tortillas (I chose corn & wheat mixed from TJ's!)

2 eggs

1/4 cup shiitake mushrooms

1/2 cup spinach

1/4 cup tomatoes

Avocado optional

1/2 tsp turmeric

Salt + pepper

 

Instructions:

1. Crack the two eggs into a small bowl and whisk them together with the turmeric, salt, and pepper

2. Scramble the eggs on a skillet 

3. When eggs are finished, remove them from the pan

4. Sautee the spinach and mushrooms on the pan until spinach is wilted

5. Combine inside of a tortilla with tomatoes (& avocado, probably) and enjoy
