Crockpot Tortilla Soup

Easy peasy crockpot dinner, for when you just want to come home to a hot meal! It was also my intention to make this with bone broth instead of water, but that didn't happen. So, feel free to kick it up a notch with bone broth or chicken stock instead of water! I also have a teeny tiny crock pot, so I made mine in two batches.

 

Ingredients: (Makes 4 servings)

1 pound of chicken, cut into strips (or can be shredded in crockpot after cooked)

1 can of fire roasted tomatoes

1 can of black beans

1/2 cup diced red onion

1/4 cup chopped cilantro, fresh

1-2 avocados

 

Instructions:

1) Combine all ingredients, except the avocado, into a crockpot

2) Cook on low for 7-8 hours or on high for 3-4 hours

3) Garnish with avocado and enjoy
