Refried Black Bean Bowl
This was a lunch for my that I took during the work week and it was SO easy. The only thing that requires cooking is the chicken, and you just throw that in the oven!! I threw all of this in a tubberware and off I was to work. And get this - I ACTUALLY looked forward to having this every day!
Quick, easy, delicious
2 cans of refried black beans (be careful here! I got mine from Trader Joe's and the ingredients are SIMPLE. Don't buy ones with a lot of added fat or lard!)
3 Chicken Breast
Cilantro Dressing (trader joe's brand) OR homemade with cilantro + plain greek yogurt + lime juice
Blue Agave Sriracha Yellowbird sauce (buy it here)
Blue corn tortilla chips (again, check your labels for ingredients + serving size!!)
1. Preheat oven to 400 degrees
2. Sprinkle salt + pepper on the 2 chicken breast and bake for 25-30 minutes.
3. Once chicken is cooked all of the way through, dice chicken breast and coat with cilantro dressing mix.
4. Mix ingredients together and ENJOY!
