Summer Cucumber Salad

This week I am craving vegetables in excess. Probably because I had to eat on the road a few times last week and it just wasn't satisfying. And since summer is just around the corner, I decided to incorporate some seasonal vegetables into my lunches this week! This salad is crisp, refreshing, and tangy in just the right amount. I also am going to eat mine with a can of tuna to keep me fuller longer. It's also better the longer it sits and marinades! 

 

Ingredients: (Makes 7.5 cups, or about 5-6 servings)

2 cucumbers

2 tomatoes

2 bell peppers

1/4 cup vinegar (I used regular, you could also do red wine vinegar)

2 Tbsp lemon juice

2 Tbsp olive oil

Salt + pepper

 

Instructions:

1) Chop all vegetables into bite sized pieces

2) Place all chopped veggies into a large bowl

3) In a separate, smaller bowl combine the remaining ingredients for the dressing

4) Whisk dressing ingredients together well and pour over the vegetables
