Veggie-Packed Tortilla Soup

Dad and I whipped this soup together in what-veggies-do-we-have-in-the-fridge fashion. And it's one for the books, y'all. We did not add chicken to ours because sometimes my family and I prefer to eat less meat (no particular reason here). But it would definitely be great with chicken too! 

 

 

Ingredients:

- 6 cups chicken broth

- 4 chicken breast (optional)

- 2 cans diced tomatoes

- 2 cans of red enchilada sauce

- 1 small bag of baby carrots 

- 1 onion, chopped

- 4 zucchini, diced

- 2 cans of hominy, drained

- 1 can of black beans, drained

- 1/2 cup cilantro, chopped

- 2 tbsp chopped garlic

- 1 tbsp chili powder

- salt & pepper

 

Instructions:

1. Combine all ingredients into a crockpot

2. Cook for 3-4 hours on High or 7-8 hours on Low.
