Chicken Seasoned Four Ways

This is for you, anti-meal prep people! I used two chicken breasts (you could do 4) and seasoned each a different way and am pairing it with different side dishes so that you don't have to eat the same thing every day! See captions under each image to find out what I am pairing each flavor with. I will be using leftover grains that I have in the pantry for each. The best part about this is that you may find a flavor you love, and then you can just season a few chicken breasts like that and enjoy that flavor more often. You can also multiply these ingredients for 4 whole chicken breasts, or more. 

First, I used a meat hammer and tenderized the chicken breasts. Then, I cut each of the chicken breasts in half to have 4 small pieces. I generally just enjoy only eating this amount of chicken, but I could have easily bought 4 separate chicken breasts and done this with a whole piece.

Thyme and lemon (or lime) baked chicken, to be served over whole wheat noodles tossed in olive oil

Spicy turmeric baked chicken, to be served with diced and baked sweet potatoes

Tex-mex style baked chicken, to be served over cilantro lime rice with black beans, salsa, and sour cream

Hatch chile smothered chicken, to be served over salt and pepper rice

Ingredients (makes 4 servings, 1/2 chicken breast each)

1/2 can of hatch chiles

3 Tbsp mozarella cheese

1/4 tsp turmeric

1/4 tsp red pepper flakes

1/4 tsp cumin

1/2 tsp garlic

1/4 tsp chili powder

1/4 tsp dried thyme leaves

Juice of 1/2 lime

Juice of 1/2 lemon (or use the other half of the lime)

Salt and pepper

4 tsp olive oil

 

Instructions:

1) Use a meat hammer and tenderize each chicken breast

2) Cut each chicken breast in half so you have 4 pieces

3) Place each chicken piece in a foil packets, side of the foil bent up and pinched together

4) Sprinkle 1 tsp of olive oil, salt, and pepper on EACH chicken breast

5) For the thyme and lemon chicken: add the 1/4 tsp dried thyme leaves and juice of 1/2 of a lemon (or remained of lime from other variety of chicken). Massage into chicken breast and place 2 slices of the lemon or lime on top of the chicken.

6) For the spicy turmeric chicken: add the 1/4 tsp turmeric, 1/4 tsp garlic powder or minced garlic, 1/4 tsp red pepper flakes and massage into the chicken breast

7) For the tex-mex style chicken: add the 1/4 tsp cumin, 1/4 tsp garlic, and 1/4 tsp chili powder and massage into the chicken

8) For the hatch chile smothered chicken: add 1/2 of a small can of hatch chiles and the mozzarella to the chicken breast

9) Close the foil packets tightly and bake at 400 degrees for 20 minutes. Time may vary based on chicken thickness, but internal temperature should reach 165 degrees
