Pumpkin Sweet Potato Smoothie

This smoothie gives you that #fall pumpkin vibe if you're super seasonal. Also enjoyed well in the (still hot) Texas fall too. To freeze the sweet potatoes after boiling them, let them cool and dry on a baking sheet. Place the baking sheet in the freezer, so that the pieces are not touching. Later, once frozen, place them in a smaller container in the freezer. This will prevent them all forming into a large clump that can’t be separated!

 

Ingredients: 

- 1/2 cup pumpkin puree

- 1/2 cup sweet potato, chopped, boiled and frozen

- 1/2 cup milk of choice, + more for desired consistency

- 1 tsp honey

- 1/2 tsp cinnamon

- 1 Tbsp ground flax seed

 

Topped with coconut shreds
