Zucchini Carrot Bread

Sometimes you just crave something sweet and continuing to NOT eat it is just going to cause that urge to increase and not let other things you eat actually satisfy. Don’t be afraid of gluten, or sweets, or eating intuitively. Enjoy your food! The more you let yourself just EAT, the less you will have shame and guilt related with your food choices.

Ingredients:

1 1/2 cup whole wheat flour

1 cup shredded carrots (I buy the already shredded kind)

1 cup zucchini

1/2 cup walnuts

1/2 cup honey

1/2 cup coconut oil

2 eggs

2 tsp cinnamon

1 tsp baking powder

1 tsp vanilla

Instructions:

1) Preheat oven to 350 degrees

2) Shred the zucchini

3) Combine all ingredients

4) Grease a loaf pan

5) Scoop the mixture into the greased loaf pan and bake for 45-50 minutes; a toothpick should be inserted and one out clean if it is done baking
